On a cool fall day is there anything more comforting than the smell of a warm bowl of hearty soup? I love soups and thankfully as my kids have gotten older they are starting to really like soup as well so this Potato Carrot and Leek Soup will be making its way on to our meal plan again soon!
This satisfying soup tastes great, comes together in minutes and is perfect for busy Fall and Winter nights when you don’t have a lot of time to spend on dinner but you don’t want to sacrifice on taste.
Potato Carrot and Leek Soup
Ingredients:
3 tablespoons of olive oil
1 ½ pounds of potatoes, peeled and diced
4 medium leeks pale parts only, rinsed, and thinly sliced
3 carrots diced into ½ inch chunks
4 cups of vegetable stock
1 tablespoon of fresh chopped parsley
2 teaspoons of dried tarragon
salt to taste
ground black pepper to taste
½ cup of heavy cream (optional)
Directions:
Heat oil in a large pot over medium high heat. Add in leeks.
Cook for 4-5 minutes. Add in carrots, cook an additional 3-4 minutes.
Add in stock, potatoes, and seasonings.
Cook for 20 minutes or until potatoes are tender. Remove pot from heat. Allow to cool slightly.
In small batches, puree soup in a blender or food processor. Or use an immersion blender, if desired.
Puree to desired consistency.
Return soup to pot and reheat.
Add in cream, if desired, mix, and serve.
