Blueberry Breakfast Bars

Did you know that July is National Blueberry Month? It is, because that is the time that the blueberry bushes produces buckets and buckets and buckets of beautiful, big, ripe blueberries!  I like to get large quantities of blueberries from my local U-Pick patch and freeze them so I can use them in baking throughout the winter. (Get instructions on how to freeze blueberries here).  I love to make Blueberry Breakfast Bars with both fresh and frozen blueberries so my family eats these awesome bars all year long. I also make a similar strawberry version, which you can find here.

These Blueberry Breakfast Bars are so yummy and great warm or cold and a pan typically lasts only a few hours in my house!  We all love them!

Blueberry breakfast bars

Blueberry Breakfast Bars

These Blueberry Breakfast Bars are easy to make and are yummy both warm and cold!
Ingredients
  • Crust and Topping
  • 1 C Flour
  • ¼ cup brown sugar
  • ½ cup butter, cold and cut into pieces
  • 2 tbsps apple juice
  • ½ tsp salt
  • 2½ cups quick cook oats
  • Filling:
  • ¼ cup brown sugar
  • 2 tsp flour
  • dash of salt
  • 4 cups of berries (blueberries and strawberries work well)
  • Splash of apple juice
Instructions
  1. Mix flour, brown sugar and salt in a food processor or stand mixer until mixed. Add butter and mix until crumbles form. Add in oats and juice and mix.
  2. Set aside 1½ cups of mixture and press the remaining mixture into the bottom of a greased 13X9 pan.
  3. For filling mix sugar, flour and salt in a bowl and add a splash of apple juice and fruit. Mix until fruit is coated with the dry items. Spread the filing over the crust.
  4. Sprinkle the 1½ cup of reserved crumbles over the filing and bake at 375 for 35-40 minutes. Let cool slightly and enjoy!

    What is 12 tsp sald or dash of sald? I’m guessing salt but 12 tsp of salt is a bit too much.
