Reminder: The Mother’s Day Photo Submission Guidelines

Reminder:  Are you a NEPA MOM?  Do you want to show off your kids in the Mother’s Day Edition of the Scranton Times?

Well, the Scranton Times/Tribune has announced their guidelines for Mother’s Day Submissions and as quoted from their website are:

In order to have photos published, families should:

– Submit 5-by-7-inch or 8-by-10-inch studio-quality portraits (black
& white or color) to Mother’s Day, The Times-Tribune, 149 Penn Ave.,
Scranton, Pa., 18503, or deliver in person to the customer service
desk of The Times-Tribune.
– Urge photographers to use white or light non-patterned backgrounds
and avoid filters of any kind to soften the photograph for the best
newspaper reproduction of photos. A matte finish is preferred.
– Submit photos by Thursday, March 22 to be eligible for the random
selection process used to determine which photos will appear in color.
Meeting this deadline does not guarantee color publication. Photos
received on or before March 22 must be accompanied by $40. The fee
includes a copy of the 2012 Mother’s Day edition which each
participant will receive when picking up her photo.  Photos submitted
between March 23 and April 5 will not be eligible to appear in color
and must be accompanied by $50. Photos received after April 5 will not
appear.
– Include mother’s name, daytime phone number, local address and
names of children, as they appear from left to right. Print legibly on
the back of each photo. Information will not be changed once
submitted.

Note: If the family resides outside The Times-Tribune circulation
area, the back of the photo must include the family’s connection to
the Scranton area.  In addition, mothers may have their photos
published in both The Sunday Times and The Sunday Voice, Wilkes-Barre,
for an additional $10 fee.

Smart Hands Sign Language Classes

Have you ever wanted to learn Sign Language with your children?   Well these classes may be just what you are looking for!

Great Imaginations LLC offers Mommy and Me and My Smart Hands(infant sign language) classes. Classes are now forming for the session beginning January 31st.  This class is run in an 8 week session. In these classes you will learn over 100 signs to use with your child.

Classes are 45 minutes in length and are created for parents/caregivers and babies. In a playful, educational and language-rich environment, caregivers and children will build their American Sign Language (ASL) vocabulary through instruction, interactive games and songs.

Tried and True Tuesday: Beef Barley Soup

Okay, I will admit I don’t have a photo of this recipe-sorry….but it gets eaten so quickly I don’t have time to snap a photo :)

This is a recent addition to the NEPA MOM Tried and True Recipe family but it is a goody, especially on cold winter days. It is my adaptation of a Beef with Barley Soup from the Tasty Kichen.

This hearty soup meets with approval from all members of my family so I hope your family enjoys it as much as mine does.

This is my version….

2 tbsp. Olive Oil

1 lb. beef stew cubes (cut into tiny, bite sized pieces)

4 cloves minced garlic

Carrots (as many or little as you like)

3 whole potatoes, diced

Salt to taste ( I use quite a bit)

2 c. beef stock

4 c. chicken stock

2 c. water

1/2 c. barley

1/2 tsp thyme

A few squirts of Tomato paste to add color and flavor.

Heat a large pot over medium heat and add oil. Brown the beef cubes and add garlic and cook briefly while stiring often.  Add all ingredients except tomato paste to pot, bring to boil, cover, turn heat to low and  and simmer until potatoes and carrots are softened, stiring occasionally.  If the soup thickens add additional broth or water to thin.  Add the tomato paste, adjust seasonings to your liking and serve.

Enjoy!

*Note: Leftover soup may thicken, just add more broth to thin while reheating.*

My New Years Resolutions…

I tend to make a lot of resolutions for the New Year but this year my top two are:

1. stay on top of housework before it gets out of control and

2. start using my time wisely.

Ironically, these are areas that I tend to struggle with but yet know exactly what I need to do to make it happen.  This year I am committing to getting serious about these issues and plan to use two products that I have used in the past to much success but have fallen off the bandwagon and am determined to implement into my life again.


First, I plan on using the Motivated Moms printable chore list to stay on top of my household chores.  This program is easy to use…there are many options to chose from and basically it just spells out for you each day a minor chore to do.  Once done with that chore you just check it off and move on.

Cut/sort/file coupons

Make shopping/errand list

Monday 3

Change dishcloth/towel

Change hand towels in bathrooms

Clean middle shelf of refrigerator

Vacuum main/public rooms or 1st floor

Vacuum furniture in family/living room

Clean toilets

Replenish stock of toilet paper in bathrooms

And so on…

These chore lists are just $8 and cover a full year of chores. 

The second program is one that I have shared with you in the past called Tell Your Time: How to Manage Your Schedule So You Can Live Free

This e-book is full of suggestions on how to evalute your time, determine what your priorities are and make the most of the 24 hours in each day. I swear, whenever I follow her advice and my time schedule my days go so much smoother! Basically, her program has you evaluate how you spend your time and helps you determine a loose schedule to follow so that you stop cramming 26 hours of work into 24 hours.

I’m committing to these programs and will update you all on how it is going in 1 month.

Tried and True Tuesday: Lasagna!

Okay so this really is one of the easiest staples in my Tried and True recipe files.  It’s filling, it can be made ahead of time and all you need to round it out as a meal is some good bread and a salad!  It is always a hit in my house and in fact I didn’t even get to take a picture of it before people started digging in.

Ingredients:

3 cups spaghetti sauce

1 package Lasagna noodles, uncooked

4 cups Ricotta cheese

2 cups shredded mozzarella

1/4 cup grated parm cheese

2 eggs

1 tsp salt

pepper to taste

Directions: Cook pasta according to package directions.  Heat oven to 350 degrees.  Combine cheeses, eggs, salt and pepper for filling.  Spread sauce on bottom of of 13×9 pan and add  4 pasta pieces over sauce.  Spread part of cheese mixture over noodles, and add sauce. Repeat layers with the last layer being sauce.  Sprinkle with parm cheese and cover with foil.  Bake 30 minutes until hot and bubbly.  Remove foil and bake another10 minutes or until lightly brown.  Let stand for 10 minutes before cutting.

Cut and enjoy! Mangia!

Tried and True Tuesday: Marinated Pork Chops

I love to try new recipes and talk to friends and family and get their favorite recipes but sometimes, when your busy you just turn to your families favorites~your Tried and True Recipes~ to get dinner on the table.  Because of this I have decided to add a regular feature to NEPA MOM called Tried and True Tuesday.  Now, keep in mind that I am NOT a chef, or even that great of a cook.  These are NOT meals that I have come up with on my own, they are just meals that I turn to often(sometimes too often!)

Up First:

No Mystery: Marinated Beef, Chicken, Pork or Portobello Mushroom by Rachael Ray (found in her 30 Minute Meals 2 Cookbook)

Note:  I have only ever made this with Pork Chops so I cannot  comment on how it is with the other options but the pork chops are tasty!  I typically make mashed potatoes and a side salad to round out the meal.

Basic Marinade

3 tbsp red wine vinegar

1/3 c. extra vigin olive oil

2 cloves garlic, chopped

1/4 to 1/2 tsp crushed red pepper flakes

1 tbsp. chopped fresh thyme (I omit this)

1 tbsp chopped fresh parsley (I omit this)

salt and freshly ground black pepper

Basic Pan Gravy

2 tbsp butter

2 tbsp shallots or onions

4 mushrooms, crimini or button, finely chopped

2 tbsp flour

1 c. beef or chicken stock

Combine marinade ingredients in the bottom or a shallow dish and season meat of choice with salt and pepper.  Place meat in marinade and turn to coat.  Allow meat to marinade at least 10 minutes.  Heat a non-stick skillet over medium-high heat and add marinated meat cooking 5-6 minutes on each side.  Move to a warm plate and cover.  Add butter to skillet and chopped shallots/onions and mushroom bits and saute 3 minutes stirring occasionally.  Add flour to the pan and cook 2 minutes stiring constantly.  Whisk in stock and reduce for one minute. Add meat and juices back into pan and cook for 3-5 minutes.

Enjoy!

This meal is so simple and yummy and once you master the pan gravy method you will use it for countless dishes!

Guest Post: Spotlight on Wiggles, Squiggles & Grins, LLC.

Hello to all moms!

Are you ready for some quality time with your young child or children?  I would like to introduce you to not only a way to spend quality time, but also an educational opportunity for you and your child(ren) to enjoy as a team!

I am the owner and director of a new mommy and me business, Wiggles, Squiggles & Grins, LLC.  After moving away from the local area to New York City and having children of my own, I found wonderful experiences with several different mommy and me classes.  My son Brenden and I enjoyed the classes and quality time together.  Upon returning to Northeastern Pennsylvania to be near relatives, my youngest child Kylie, missed out on these valuable experiences.  Having a background in education and school counseling, with the majority of my experiences in early childhood daycare settings, I decided that a “mommy and me” business was the perfect fit for both myself and the families of the Northeastern Pennsylvania area  thus, the creation of Wiggles, Squiggles & Grins, LLC is now here.

At Wiggles, Squiggles & Grins, LLC, you and your child(ren) will experience music and movement in a relaxed setting.  The groups will be no larger than 6 children with a parent or caregiver remaining at any one session.  Please note that this is not only for moms!  Dads, grandparents, and other caregivers may bring your child as well!    There are groups for children beginning at 6 months old and continue through 5 years old.  We can also make arrangements for you to attend with a younger infant sibling if necessary, or combine siblings in a group that can meet both of their needs for development.  Sessions meet for one hour each week for either a 6 or 8 week period.

At each session you and your child(ren) will experience music and movement in a way that helps to meet many developing needs of children.  Through movements to the music, your child will develop hand-eye coordination, develop balance and develop gross motor skills.  They will also learn educational concepts important for school and reading readiness, such as letters and letter sounds, colors, shapes, and numbers.  Many of the songs will also help to develop the positive social skills that we want to instill in our children at a young age.

Another part of each session is an art process experience.  Your child will develop fine motor skills that are so important for later writing skills.  Children can learn so much just from interacting with art materials in a relaxed setting.  A few of the art experiences will also involve creating instruments with recycled materials, similar to those used during our music experiences so they may continue the enjoyment of music at home.

I look forward to meeting the moms and families of Northeastern Pennsylvania and enjoying many musical, educational and fun experiences together!
