I love to try new recipes and talk to friends and family and get their favorite recipes but sometimes, when your busy you just turn to your families favorites~your Tried and True Recipes~ to get dinner on the table. Because of this I have decided to add a regular feature to NEPA MOM called Tried and True Tuesday. Now, keep in mind that I am NOT a chef, or even that great of a cook. These are NOT meals that I have come up with on my own, they are just meals that I turn to often(sometimes too often!)
Up First:
No Mystery: Marinated Beef, Chicken, Pork or Portobello Mushroom by Rachael Ray (found in her 30 Minute Meals 2 Cookbook)
Note: I have only ever made this with Pork Chops so I cannot comment on how it is with the other options but the pork chops are tasty! I typically make mashed potatoes and a side salad to round out the meal.
Basic Marinade
3 tbsp red wine vinegar
1/3 c. extra vigin olive oil
2 cloves garlic, chopped
1/4 to 1/2 tsp crushed red pepper flakes
1 tbsp. chopped fresh thyme (I omit this)
1 tbsp chopped fresh parsley (I omit this)
salt and freshly ground black pepper
Basic Pan Gravy
2 tbsp butter
2 tbsp shallots or onions
4 mushrooms, crimini or button, finely chopped
2 tbsp flour
1 c. beef or chicken stock
Combine marinade ingredients in the bottom or a shallow dish and season meat of choice with salt and pepper. Place meat in marinade and turn to coat. Allow meat to marinade at least 10 minutes. Heat a non-stick skillet over medium-high heat and add marinated meat cooking 5-6 minutes on each side. Move to a warm plate and cover. Add butter to skillet and chopped shallots/onions and mushroom bits and saute 3 minutes stirring occasionally. Add flour to the pan and cook 2 minutes stiring constantly. Whisk in stock and reduce for one minute. Add meat and juices back into pan and cook for 3-5 minutes.

This meal is so simple and yummy and once you master the pan gravy method you will use it for countless dishes!

That looks really good – oddly enough we had pork chops for dinner tonite, first time in a year. I used cream of mushroom soup which is pretty good. I want to try them your way next.
I actually have a TON of tried and true recipes (they can all be found on my recipe index: http://3boysandadog.com/recipes/) but…. tonight we are having red beans and rice and since it takes all day to cook dried beans, I am getting hungrier and hungrier the more the smell permeates the house. LOL!
